I have come to find that a lot of fruit that is either picked too early usually does not have much taste yet because it hasn't had time to develop fully. Now I also noticed that a lot of the time old fruit tends to lack taste as well. I think the reason for this is it loses a lot of its flavor the older it gets. So its best to purchase fruit when in season. Always ask someone in produce to help you pick out the right kinds of fruit, they know whats ripe and whats too ripe.
Fruits that does not have a specific taste contains equal amounts of starch and acids which give them a neutral taste.
Because other foods doesn't taste good in fruits that doesn't shape them.
The sweet taste comes from sugars while sour tastes come from organic acids but the aromatic flavours come form a variety of chemical compounds some of which are called esters. Different fruit varieties have different combinations of these chemicals which means that the fruits will taste different. Fruits have evolved to taste good so as to attract animals to eat the fruits and disperse the seeds.
Some fruit tastes sour because, god makes them sour, we cant change the sour of a fruit or a vegetable.

No, not in the first place. More important to taste of fruits (and juices) are concentration and which kind of acids are in them.

Citrus fruits taste citrusy due to the presence of compounds called limonoids and limonene, which give them their unique flavor and aroma. These compounds are responsible for their tangy and refreshing taste. Additionally, the high acidity levels in citrus fruits also contribute to their characteristic citrusy flavor.
