It depends how big you make the sausages. My local supermarkets sell one pound packs of sausages which contain 8 (each of 2 oz). They also sell packs of chipolata sausages which, being a smaller (thinner) sausage, have more per pound pack (how many I can't say as I don't buy them, but I'd guess you'd 10 to 12 of them). Cocktail sausages are even smaller and you'd get even more of them, around 30 per pound.
