Child tickets are cheaper than adult tickets, so it's hard to see why you would want to do this. However, if you happen to have an unused adult ticket for some reason and would like to use it for a child, Disney World's website says:
"In general, you can upgrade to any type of ticket - provided the new ticket is of equal or greater value than the old ticket - by simply paying the difference. However, no refunds will be issued if the new ticket is of lesser value."
To me, that implies that they will let you trade your adult ticket for a child ticket if you want to (though you won't get any money back). If you'd like to know for certain before planning your trip around it, you should probably call them, explain the circumstances, and ask. You are not, however, allowed to transfer a ticket once it's been used... if you buy a seven-day pass, the person who uses it the first day is the only person who can use it on the remaining days.
