There's no hard limit. Each of your monsters can attack once unless they've got effects that let them declare more, however as long as you can keep replacing your monsters with new ones without ending the battle phase, these can all declare attacks too.

However Class as Normal Monsters, until they are normal summoned (Twice, if the Gemini Monster was originally Normal Summoned) Where you will get an effect. This does take up your normal summon of the duel, so in other words, you will have to rely on Special Summoning other monsters OR If you have normal Summoned a Gemini Monster, you will have to wait a turn (unless you use Double Summon, or Ultimate Offering) until you can use the effect There are some cards that allow you to Special summon a Gemini WITH it's effect (i.e. Supervise). In a sense, yes. You attack once per monster. But if one of those monsters was just summoned that same turn, then you cannot attack with it due to summoning sickness which lasts for one turn after summon.
well there are a few but mostly its monsters effects that let you attack twice for example:elemental hero wildege and ultimate tyrano"Double Attack" is one spell card that does it.
usually with some monsters they tend to attack you because you are below or near their level, this does get annoying they will stop attacking you when you are at twice their level.
