Uh... yeah THEY DO! Remember when Anakin's arm was cut off by Count Dooku? It hurt so bad that he was knocked unconscious for a couple minutes. And you don't bleed because the laser in the lightsaber fries up your blood vessels and arteries.
In a realistic sense, lightsabres might not actually hurt, because they destroy the nerve endings instantly, so no pain would be felt.
