Basically, yes.

Inside the hilt (handle) of the lightsaber, plasma energy is created. It then passes through focusing crystals, and the blade pops out of an emitter. This is pure plasma energy. It is very hot - Several thousands of degrees. So, yes, it does cut through flesh by melting it.
