Yes. Some of them have obvious cameras that take your photo on the ride, but pretty much all of them have more-or-less hidden infrared cameras as well.
One of the funniest things I have seen at Disneyland was this bozo who kept trying to get an umbrella out on Pirates of the Caribbean for some reason (maybe he thought he was really outside, or maybe he thought he was actually on Splash Mountain, or maybe he just really, really didn't want to get even very slightly wet on the drops). Every time he'd start to open it, no matter where on the ride we were or how dark it was there, a Cast Member's voice would come over the speakers saying "Sir, please put the umbrella away."
