Hermione doesn't turn into a person after drinking the Polyjuice Potion. She accidentally used cat hair instead of the human hair she meant to use (Millicent Bullstrode). She turns into a sort of half cat/half human. She has black fur, yellow eyes, whiskers, cat ears, and a tail, but she also has a human-shaped body and can talk still. (In the movie, she had orange fur).

If you are talking about Hermione's second year, she accidentally put cat hair instead of human hair in her potion, which turned her into a half cat, half human creature.
