No, he doesn't. Luke is still alive in Kronos's body, fighting him. At the end of the war, Luke comes to his senses. He takes control of the body for a moment, and in that moment, Percy makes his decision: "A single choice shall end his days." Percy's choice was to give Luke Annabeth's dagger, the cursed blade. Luke then killed himself, because he knew that if Kronos took control then the world would be destroyed.
Percy does not exactly destroy Kronos, but when they are fighting Annabeth gets Kronos' scythe stuck in the hilt of her knife. She tries to talk to Luke before Kronos goes into his true form and burns Luke's body. She says he promised that they would be friends and that he could do something about it. As Luke is involnerable, he has one volnerable spot under his arm. He takes Annabeth's knife and stabs himself. Kronos shatters into a million pieces and will never be able to regain consciousness. So really Luke defeats Kronos and the prophecy comes true.
No, Kronos is a titan, so he's immortal and technically can't die. But Percy did make the decision to give Luke the knife and Luke killed himself ('cause Kronos was possessing him) so that Kronos disappeared and will (hopefully) never regain consciousness again
