Lord Voldemort was not yet sharing Quirrell's body at the time of shaking Harry's hand.

This is a common misconception because when we first meet Quirrell in the movie he is already wearing a turban. However, in the book once Harry gets to Hogwarts he mentions that Quirrell has started to wear a turban.
