Using a rapid fire ship. Also, take time to observe their flight pattern. You'll notice there is usually 1 "odd man out". Aim for that one so your blasts focus in on 1 at a time. Shooting at the ones that are grouped together causes the blasts to try and get them all at once. In order to make the bird flip, (give you coins), you have to blast it several times.
