On the left-hand sidebar, at the bottom, there is a category titled "Classes". If you click on "Registration," you can tick off boxes for the classes you want to take. Then, you need to buy the proper supplies/books (they're listed under each class) in order to actually participate in the classes.

Hogwarts Extreme is an online roleplaying community, so there is no specific "way" to play it. Muggle cannot attend Hogwarts or even see the building. The only subject Hogwarts teaches that doesn't involve magic is Muggle Studies.Presumably, Ancient Runes and Arithmancy could also be learned by muggles although as we never see these classes that cannot be said for sure.In the video games, classes like Music and Art are also mentioned. However they are never mentioned in the books.

Most virtual Hogwarts are RPG's using an online community of people and are not one player. It is also very uncommon to find a website that will allow children under the age of 13 to register due to COOPA laws. Your best bet is Pottermore which isn't exactly a virtual Hogwarts but it allows you to explore the books in a new way whilst earning points for the house they were sorted into. It also allows children to register with to permission of a parent.
Classes at Hogwarts were mainly taught by trained witches and wizards. There were a couple of exceptions, such as a centaur, half-giant, and a ghost.
