Well, you can VS. every trainer you see until you see a new Pokemon if you've seen all the wild Pokemon, or if you haven't seen all the wild Pokemon available. Oh, and by the time you get to the Elite Four and you still haven't seen all of the Pokemon, challenge the Elite Four, and you'll probably get your Pokedex done after that. *wink* Good luck with Sinnoh roaming legendary's!
