The seventh book was published about 10 years after the first book, so for each of books 2-7, the author took about one and a half years on average.
I believe that is different for each every individual. The only person to ask that question is J.K. Rowling since she wrote all of the Harry Potter books.

Most likely, they probabley will do the last scene at the end of deathly hallows to add some closure to the harry potter series. Other than the last scene of daethly hallows i dont think J K Rowling will write any more Harry Potter books as she has started a new series of books.
JK Rowling has said that she will not write any more Harry Potter books. However fictional stories never really end. Someone may write another. Generations yet to come have yet to start them. Just as people nowadays are reading the stories of authors long since passed away.
