I found Arthur's Legend 3 in the 'Go for the Goal' mission of Crystal Cave in Sonic and the Black Knight. A townsperson traded it to me - he was on the high road right past the giant just past the area where Caliburn scolds Sonic for 'falling'. (He'll do this even if you don't fall... which you will not want to do, since the only way to reach the giant is to cross the three platforms.) I don't know if this townsperson gives the book every time, but keep trying if you don't get it.
