In YuGiOh the card game what if you are forced to have over 7 cards in your hand without Infinite Cards as a result of the effects of Giant Trunade or Penguin Soldier?

There is no limit to the number of cards in your hand at any one time, however, you must discard down to 6 at the end of the End Phase of your own turn. At any other time, it doesn't matter.
So if you have five cards in hand, and your opponent bounces two or more into your hand, that's ok. So you have 7 now. Your turn draw will make it 8, but it won't matter unless you still have 7 or more when you reach the end of your end phase, which will make you have to discard.

No, the normal result of battle applies first, then the effect. Monsters considered destroyed by battle are not actually sent to the graveyard until the end of the Damage Step, this is after any flip effects have resolved. So Penguin Soldier is actually still on the field when his flip effect activates. However, monsters considered destroyed by battle can not be affected by effects that try to return them to hand or deck. Penguin Soldier will be unable to choose himself as a monster to return, unless he survived Damage Calculation.

If any other XYZ says it can be used in the opponent's turn, then more than likely it is a Quick Effect also and could be used during either Battle Phase. Giant Soldier of Steel is an example.Brotherhood of the Fire Fist - Tiger King on the other hand has an effect that negates the effects of all face-up non-Beast Warrior monsters until the end of the opponent's turn. This is an Ignition Effect and can only be activated in your main phases, so could not be used in the battle phase, including yours.

It targets two monsters. Cards like Obelisk the Tormentor is fine with that, it cannot be targeted at all. Cards like Chaos Command Magician are not though, CCM can only protect itself from monster effects that choose one target. Penguin Soldier could bounce him, and another monster.
