Will Turner took upon the role of Captain of the Flying Dutchman. However, replacing Davey Jones does not necessarily mean he will become a 'sea monster'. According to the films, the only way the Captain of the Flying Dutchman will turn into a 'sea monster' is if the Captain neglects his duty of ferrying souls to the other side. Whether or not Will ferried the souls is not revealed in any of the Pirates of the Caribbean movies.
