None of the on-screen characters die. Since Copper is an orphan, it is assumed that his mother (or both parents) were killed by hunters. However, this occurs before the events of the film.
I assume this is referring to Widow Tweed, the lady who raises Todd the fox. If so, no, she does not die in the movie.
