Use protein, iron, carbos, zinc, calcium and hp up on your evee and have it level up in a ruby or sapphire or emerald game and it will evolve either into Espeon or Umbreon depending if its morning or night. Now there are new forms of evee only exclusive in diamond and pearl and platinum, to get them you first again need your evee to be friendly with you but on a condition there are two special stones one in the snowpoint area and one in the area of the grass city sorry i forgot the name to it.. But you must level up your evee next to these stones and it will become a glacieon in the snow area and a leafeon in the grass area.
