There are a few explanations. Ditto can transform into its opponent, Castform changes by the weather, and Eevee has many evolutions.
Giratina will have 2 new forms and Shaymin will have a Sky Form. There are 5 new Pokemon coming out. Since it's just a remake it probably won"t

The details regarding the new De-evolution method in Pokémon Omega Ruby and Pokémon Alpha Sapphire is that it's not a de-evolution mechanic but rather a Primal Reversion that will allow Groudon and Kyogre to revert to their Ancient forms of Primal Groudon and Primal Kyogre however they will need to be holding the Red and Blue Orbs respectively in order to Primal revert and then as soon as they enter into a battle they will primal revert and Primal Pokémon do not count towards the "1 Mega Evolution per battle" limit.
