Well, from what I've seen in research and even from the "Harry Potter" series, Hippogriff are proud creatures. Of course, I'm not sure that they automatically try to kill anyone that insults them. They have been used throughout literature as loyal steeds as well as monsters to be killed and guardians of a sacred place. It honestly varies between what is written and not much is truly known about them other than what cultures have shaped them into. I hope this helps. :)
