When Voldemort had his rebirth he used snake venom and infused with his personality (slytherin, nagini, parseltongue, chamber of secrets) meaning that he developed snake-like characteristics, for example slits for nostrils
Voldemort, over time, made Horcruxes and therefore became less human, and more snake-like, and that altered his appearance. Or you could say that they used dots and fancy technology in the movie.
