When Paladin of White Dragon says to destroy the defending monster 'immediately', it means as a triggered effect at the very beginning of the Damage Step, before monsters are normally flipped, and bypassing Damage Calculation.
If you never enter the damage step against that monster, ie, if Paladin of White Dragon is destroyed first, or the attack is redirected to another monster, the effect might not activate, the face-down monster will be safe.
