Although he never watches his own films he does have certain characters that he is fond of. Cry Baby Walker, Edward Scissorhands, Jack Sparrow and John Wilmont, Second Earl of Rochester are among his favorites.

I'm not sure he really has a favorite 'movie'. He has stated that some of his characters have been enjoyable to play. Jack Sparrow, John Wilmont, ect. He also has favorite people that he loves to work with, Tim Burton being one. I think now that he is a father, he enjoys making movies his children like to watch. He said once, when his kids were very young they thought he was a pirate, not an actor. That must have been great fun, thinking their father was a dashing pirate. Not many people can say they have had that experience.
