Vanessa Anne Hudgen's favorite Filipino food is what they call "Halo-halo adobo pancit" Clarification:

Halo-halo adobo pancit are three different foods. Halo-halo is a dessert consisting of crushed ice in a tall glass with a spoonful each of sweetened beans, sweet potato, sweet yam, sago, Gelatin, jackfruit, and any other preserved fruit you can think of. Milk is then added. You may also top it with a scoop of ice cream. Halo-halo literally translates to 'mix-mix.' Adobo is a pork dish. Pork cubes are boiled in a mixture of vinegar, soy, peppercorns, a bay leaf, and lots of garlic. When the meat is tender and the the water/vinegar mixture has evaporated, it is allowed to cook some more in the natural fat given off by the pork cubes until crispy (if desired).

Pancit is a Chinese noodle dish. Vegetables such as shredded carrots, green beans, cabbage, etc. are sauted, then mixed with the cooked noodles. It is dry rather than soupy and best served with a slice of lemon or the local calamansi.
