In the end of the anime, she chose Kaname.
because zero is the vampire knight yuki is the princess and kaname is the king its completely obvious that kaname doesnt end up with yuki because what story does the king end up with the princess i mean that's just wrong just saying did that answer your question? WARNING SPOILER but when yuki becomes a vampire she is argueably a queen because shes a pureblood. plus a queen in chess is kickass she can move like all the pieces apart from the knight. the knight is the only one who stands a chance at killing the queen without the queen being able to attack him. A special relationship between knight and queen perhaps?
Its long because afterwards she discovers that she was a kuran and becomes a pureblood again. Even when she was a little girl her hair was long, though through out the Vampire Knight series we see Yuuki's hair short. When it shows her in the past with long hair, she decided to get it cut.
