In the Deathly Hallows Snape was the Headmaster of Hogwarts and seemed to be a Death Eater. Near the end of the book, Harry witnesses Snape dying. He goes to him and Snape gives him two memories in a glass vial. The first memory is Snapes way of telling Harry how much he loved Lily Evans. The second memory is him talking to Dumbledore and agreeing to be a double agent and remain faithful to Dumbledore.
Alec Hopkins plays teenage Snape in the flashbacks in Harry Potter and the Order of the Phoenix. Whether he will play young Snape again in Harry Potter and the Deathly Hallows, I am not sure.

In The Philosopher's/Sourcer's Stone, Snape's role seems to be one of helping Voldemort back to power and so he treats Quirrell badly in order to get information of how to get past his protection for the stone. Later in The Deathly Hallows, we learn that Snape was keeping an eye on Quirrell on Dumbledore's orders and to learn what Quirrell was up to.
