Shaggy's age has never been revealed or mentioned in any Scooby-Doo episode, movie, etc.
In "The New Scooby and Scrappy Doo Show" episode "Wedding Bell Boos!", Scooby, Shaggy, Daphne and Scrappy visit Shaggy's parents' house in Plymouth Massachusetts for Shaggy's sister, Maggie's wedding. They might have visited Massachusetts some other time too, but this is one time that I'm aware of.

Norville Rogers.
While they are seen dating in the recent "Scooby-Doo! Mystery-Inc," there might be several example in the old show to suggest their dating. In the very first episode, "What a Night for a Knight," Velma gives Shaggy his medicine. In "A Gaggle of Galloping Ghosts," Velma loses her glasses, and Shaggy gives Velma her extra pair. This shows that they look out for one another. Shaggy tells Velma "Don't worry, I'll save you" when the robot crashes into the boat in the episode "Foul Play in Funland." Shaggy and Velma are also seen dancing together (although Shaggy might have two left feet).

Yes. In the episode Night Terrors of Scooby Doo Mystery Inc., Shaggy and Daphne were kissing by the fire. Daphne thought she was kissing Fred, and Shaggy thought he was Fred. Shaggy said it was the best kiss ever.
Not exactly. Shaggy's and Scooby-Doo's families have been together since the Pilgrim days.

I don't know of an episode where all the gang becomes dogs, but there is an episode where Shaggy and Scooby swap minds ("Who's Scooby-Doo?", part of "The Scooby & Scrappy Doo Puppy Hour."
