I have a book on Disney and his work. The book states that Disney had plans and models were made before the site for the park had been found. His plan called for a railroad defining the perimeter with the main station at the entrance. It doesn't tell me what ride was the first constructed, but I am going to guess the railroad. It does tell me on opening day that many of the most popular rides were not even in the planning stage. I also know that many that were there didn't work very well and some broke down on the first day.

Yes they do have Mater Horn at Disneyland but it all ways gets stuck all the time and staff have to walk up the mountain just to fix it cause it is so old it was the first ride to come out at Disneyland.
No. There were several rides at Disneyland that were open on, or within a few weeks of, opening day; Small World is not one of them. Small World didn't open at Disneyland until 1966, over a decade after Disneyland itself did (the ride opened at the New York World's Fair in 1964, but even that was several years after Disneyland's opening).

Perhaps the monorail, but I'm not sure it operates before the park opens, even for hotel guests, and also I would definitely consider it "a Disneyland ride" that happens to have a stop outside Disneyland as well, as opposed to "not a Disneyland ride" that happens to have a stop inside Disneyland.

If you mean the Storybook Land Canal Boats, that is one of the few remaining attractions that existed ever since Disneyland first opened in 1955.
