They are all over the castle and grounds. Sometimes you have to unlock certain spells to unlock the crests if they are blocked by an enchantment. They are sometimes even sitting in corners or out in the open. Just carry on through the game and you're bound to find some. Many are hiding behind cobwebs or above doorways, the former in which you must use incendio, the latter you must wingardium leviosa an object and throw it at it, and so on. Mini crests make up crests as well.
