I think the first war began when Voldemort finished creating all of his horcruxes and began to take over. This was when the Order was formed, and Voldemort learned about the prophecy. He then tried to kill Harry Potter, where he was "killed" and the first war ended. The second war began when Voldemort returned to full power and Harry began to destroy his horcruxes. This war ended when Harry killed Voldemort for real. Yeah, I am a Potter expert!
