Here, we come to an issue that no modern fantasy author would touch with a ten foot pole.

As a matter of fact, it depends on which humans we are talking about. The good guys, the men of the Northlands and the people of Gondor, are described as fair of skin, meaning light skinned. As we get further away, and into the lands where Sauron dominates, we find people of increasingly dark complexion.

In Tolkien's defense, he doesn't claim that the good guys are good guys because of their skin. Rather, the good cultures are the ones that have interacted with the elves, and Sauron finds his servants among those who the elves never worked with. The fact that all the peoples without elven influence turn to evil may say something about innate human nature, but that is beyond the scope of this answer.
