Season 1 was based on book 1, season 2 was based on book 2 and season 3 covered the first half of book 3.
Many changes were made for the TV adaptations so it might be worth reading the books anyway. 'Ros' was in all three seasons, but never existed in the books, she was an amalgamation of a few different characters. Jaime's hand was cut off by a man called Locke in the show, but by Virgo Hoat in the novels, etc.
