HM 5 -Defog- is found in the Great MArsh by talking to a man on your right, i think. Or left. Try both. Hope thins helps. =]

After beating Pastoria's Gym Leader Wake, Go in the great marsh and when you get to the start go to your right and talk to that person. She or He Will give you Defog

In Pastoria City, enter the Great Marsh, the place where you can use Safari balls. There will be two guys once you're in. One of them will give you hm 5.

In the Safari Zone. Walk into the actual Safari Zone and there should be a green haired boy (he looks like a Cool Trainer) and he'll give it to you.
