Luna doesn't transform into a human in any of the Sailor Moon anime TV series episodes, but in the Sailor Moon Smovie, subtitled in English as "Hearts in Ice." This movie was based upon the "Lover of Princess Kaguya" side story from the manga, which was first published as a separate, larger-than-normal tankoubon volume, and was later included in Volume 11 of the original print-run of the manga (out of 18 total volumes), and in Volume 2 of the Side-Stories from the re-released, "new cover edition" of the manga (12 volumes, plus the 2 volumes of the Side Stories, for a total of 14).

Volume 18 of Fruits Basket came out in November 2007 and has kazuma sohma on the front cover. Volume 19 is due to come out in march 2008 and will have Kakeru Manabe on the cover.
An anime? Not yet, if any. There is a manga series, though that covers the events in the games. It isn't exact and doesn't cover absolutely everything but they put it together in a nice story.
