Because Jean couldn't control the Phoenix inside of her. As you can see earlier in the film Jean or the phoenix breaks Xaviers mind barriers and becomes conscious to find Logan next to her. Anyway It was dangerous for Jean to live because she would be uncontrolable and ... well kill everyone. Hope this helps x
