Haymitch wants Katniss and Peeta to earn new skills in the training center to increase their chances of survival in The Hunger Games. By honing their abilities, they can stand out to the Gamemakers and potential sponsors, which is crucial for their success. Additionally, developing these skills fosters teamwork and enhances their bond, making them a more formidable pair in the arena. Ultimately, Haymitch aims to prepare them both mentally and physically for the challenges ahead.
In the simplest sense, they show him that they are some of the first tributes from district twelve that actually have physical skills and are capable of winning the games. Haymitch then believes they have a chance to be victorious.
Haymitch Abernathy suggests that Katniss Everdeen and Peeta Mellark form alliances with other tributes who have skills that can complement their strengths. He specifically emphasizes the importance of aligning with those who can provide protection and support, such as the more capable and experienced tributes. By forming strategic alliances, they can increase their chances of survival in the Hunger Games.

Katness needs to maintain her compassion and humanity in a life-or-death game. She has the skills, intelligence and magnetism to emerge the conquering hero, killing off her competitors and using her alliances without any real loyalty. She never sells out to the system though she has the potential to eventually rise to the highest levels of power within that system.
Peeta loves Katniss for real, and wants to protect her. If the careers knew about Katniss' skills, it would be easier for them to know her weaknesses and/or how to kill her. Peeta wants to keep Katniss alive without getting himself killed.

At first you are led to believe that Peeta asks to be coached separately because Katniss scored higher than him with the Gamemakers. Also because of the closeness of The Games. Later you suspect that another reason is because he wanted to talk strategy with Haymitch. Peeta wanted to talk to Haymitch about telling his love for Katniss. After their interviews Katniss is angry because she wasn't told, but Haymitch informs her that it was right that she not know. She needed to act surprised. She's not a good actress so this way she was genuinely surprised.
Katniss runs to the Cornucopia because she sees a weapon (specifically: a bow and a quiver of arrows) that she needs and knows was placed in the arena just for her. She also realized that Haymitch did not get a chance to see all of her skills. Haymitch didn't get to see her run, and she was firm in the belief that she could run quickly. She also realized that she would have little chance of coming back, and that she would need supplies in order to survive.

They dont take him seriously until he starts to take them seriously. he realises that for the first time he has "a pair of fighters". after that, Haymitch starts to sober up and help them survive the games.

Haymitch says that Katniss has "about as much charm as a dead slug." Her lack of interview skills are a major problem because Sponsors like to be charmed and convinced into helping their tribute. Katniss isn't very good at making friends - as she herself admits - and is concerned that her bluntness and lack of charm will prevent her from gaining Sponsors.
