Because he had accomplished many things that not even Hercules had done (including the impossible). Also, his personalities can easily identify him as a true son of the Sea God. The most important thing that made Poseidon all the more prouder, is that Percy had remained humble and modest through everything he had done for the sake of Olympus.

As is stated in the book:
