Why does Percy think the whole school is playing a prank on him?

Percy did not yet know about his roots in Greek mythology or that he was a demi-god. When he destroyed his teacher (who was a monster) with a celestial sword, an illusion known as mist was put over the students. The mist altered their memories and they all were under the belief that they had a different teacher the entire year. The mist did not work on Percy and he remembered the entire thing clearly. He could not understand why the other students would fake not remembering the first teacher.

∙ 11y agoBecause Percy remembers Ms. Dodds as the math teacher at Yancy Academy and the rest of the school, besides Chiron (Mr. Brunner) and Grover, don't. So Percy, being very confused, thinks that the whole school is tricking him. But Grover messes up and Percy finds the truth.

Well Grover is Percy's 'Protector' but in high school together Percy was always protecting Grover from fights and stuff like that. So Percy is surprised when Grover believes that he is Percy's protector.
