There are 2 fire/psychic Pokemon in B&W. The first is Victini, only attainable by events. The other is Darmanitan. Normally Darmanitan is only a fire type, however if he has the "Daruma Mode" ability, when he goes below 50% health he goes into Daruma Mode and he gains the Psychic type.

Zen Mode is not an evolution, it is an ability that some Darmanitan have. They change to Zen Mode in battle when their HP is low. To get a Darmanitan that can do this, you need to get a Darumaka from the Global Link website, and evolve it to Darmanitan. Also, you can use a rage candy bar ( you get it in winter in the ice town ) at the statues outside the desert resort. These Darmanitan have the Zen Mode ability.

Darmanitan's form can be changed by teaching it the move "Zen Mode." When Darmanitan's HP falls below 50%, it will change from its standard form to the Zen Mode form. This form change will also occur when Darmanitan has the hidden ability "Zen Mode."
Darmanitan don't always have the zen mode ability. You have to complete the game and go to the tower ( which is now just a stair way into the ground ) at desert resort. Walk through the "tower" entrance, and Juniper will pop out. She will give you a rage candy bar. Use this on one of the blue Pokemon statues to battle a special zen mode Darmanitan. Hope I helped :)

You cannot turn it into Zen mode. It Turns into zen mode when it is low health (when the health is in the red)
After you complete the main game, go to the relic castle again, off route 4. There are a number of 'sleeping' (Zen Mode) Darmanitan around the entrance. Professor Juniper will appear if you try to enter, and give you a RageCandyBar, which can wake one up and let you battle it.
Darumaka can ONLY evolve into Darmanitan. Some Darmanitan can undergo a forme change to Zen mode when their HP is low, but it is not a 'different pokemon'.
