Because His entire face never appeared on the film. Plus I think that the writers probably thought it was more mysterious to not put him in credits. Actually, I bet he, Dermot, requested that he not be credited so it would leave the audience intrigued. I think he is an amazing actor and could tell it was his mouth w/ scar immediately. I also loved that his identity remained a mystery.
