The amount of water in soil can be measured several different ways:

  • Gravimetric analysis after collecting a soil sample - the sample is weighed before and after drying. The sample may be collected via an auger or core barrel. These kind of resemble dipsticks but are designed to capture a sample, not just be inserted into the soil
  • Electrical resistance - calibrated to known moisture content. The electrodes kind of look like dipsticks but it is the resistance between them that is actually measuring the moisture
  • Heat diffusion - calibrated to known moisture content
  • Absorption into point blocks - this is probably the closest to a dipstick but the measurement is made by weighing rather than visual inspection of the probe.
  • Tensiometric - kind of a complicated device that evaluates moisture based on the amount of water that has to be added to bring it to equilibrium
  • Penetration force - calibrated for the type of soil. The force required to penetrate a certain distance or the the distance penetrated with a fixed force is correlated to the amount of moisture present in a particular kind of soil.
  • Radioactive - the slowing of fast neutrons from a source is measured and correlated to the amount of water (since water is what would be slowing them down)

All of these use probes but none of them really are what I would call a "dipstick" when I think about the dipsticks I see for measuring fluids in engines.

You could get a fairly crude measurement of how wet soil is by inserting a probe that changes color when it gets wet. Some garden stores sell little ceramic worms that can be stuck into the soil of a potted plant or in a garden that change color depending on whether the soil is wet or dry - but about all you can tell is dry/sorta wet/wet.
