Most common germs (or bacteria, to be correct) can be killed with hot water since you disrupt their proteins in the cells. The proteins get denatured, or broken up and they can't do their job, and then the bacteria get sick and die.

That's why when you get a fever, you get hot but too high a fever is very bad. Your body makes the temperature higher to try to kill the bad bacteria in your body, and that's why YOU feel sick, too!! If your fever gets TOO high, you may even die since your proteins get hurt.

There are some bacteria that can live to very, very hot temperatures, but they aren't generally living on your dishes.
