I'm not sure if i'm correct but I know that to purify something they will heat the object till its boilng point so it will become a steam and usually they have a device or tools to cope that steam and thats how it can be purify or you could just filterized the watter.
They do because, the sediment and roots filter out pollution and provide a home because, it is a safe sheltered area with lots of food perfect for plants and animals alike.
