nervous tissue
The Spinal Cord is the thick column of nerve tissue that links the brain to most of the nerves.
The reason that brain tissue is soft is because that is how God the creator chose to design it. Brain tissue is soft because it has the skull to protect it.
One good science fair project about the brain would be a diagram of the brain in sections with a description of what each section does. Another good science fair project for the brain would be to show what nerves in the brain coincide with all the nerves of the spinal canal.
The body's nerves control body functions, such as vital organs, sensation, and movement. The nerves of the spinal cord are the means of communication from the brain to peripheral nerves.

Nervous tissue
The smallest unit of the brain is the neuron (nerve cell). It is the cell that forms larger nerves and neural tissue...which is then integrated together to form the modular systems of the brain.
Muscle tissue: produce, force and cause motion Nerve tissue: Forms brain, spinal cord and cranial nerves Epithelial tissue: provides barrier for organs from outside environment Connective tissue: Holds other tissues together such as bone of blood. The nervous system includes the brain, spinal cord, and nerves connected throughout the body. It processes sensory information, controls responses, and coordinates bodily functions. The brain, in particular, plays a central role in regulating thoughts, emotions, and behaviors.

the brain, spinal cord and the nerves
Nerves transmits messages back and forth from the brain to the other parts of the body.
a gap between cells
It is found in brain, nerves and spinal cord and is not found in tendons
