They work by taking the light form the infrared spectrum (which the human eye can't see) and converts it to the visible spectrum (which humans can see).

Well, better vision in dark conditions is the obvious one. Also, most NODs have an IR floodlight, which can be used for signaling others who are also wearing NODs.

How come at night time you are not upside down if the earth spins at night?

Because the Earth spins on a near vertical axis like a top or a basketball spinning on a finger. But if you were upside down you wouldn't know anymore about it than do the people in Australia.

The retina in the back of your eye contains rods and cones. Rods allow us to differentiate between black and white, or light and dark. Cones allow us to distinguish between colors. The periphery of our vision is composed mainly of rods and the central part of out vision is composed mainly of cones. The fovea is a small indentation in the retina, directly in the center of our vision. It is composed of only densely packed cones. This is the reason why we often have a hard time seeing something in the dark unless we look slightly away from it.
