This proess is called conduction. The other processes are convection and radiation. Convection is the transfer of energy through movement, such as boiling water. Radiation is the transfer of thermal energy through a medium or space, such as the sun heating the earth.
When water molecules melt, energy is absorbed. When water molecules evaporate, energy is also absorbed. When water molecules condense energy is released. When water molecules freeze energy is also released.

Saturated water is water that's passed its boiling point yet hasn't evaporated yet. When putting ice water within this boiling-hot water, the heat energy from the boiling water transfers rapidly into the ice water, mixing the two and rapidly changing temperatures.
The potential energy of the falling down water transfers to kinetic energy. The kinetic energy turns turbines that are connected to electric generators where the kinetic energy transfers into electric energy.
