Hot oil when cooled will turn into a butter or solid matter. But some oil when cooled will turn into grease-like fillings or "Sebo".
A lot of oils don't turn into fats (solid) when cooled. They may get more and more dense (viscous) until the observer can't tell the difference, but if unsupported they still slump, like super cooled liquids. True fats become more like crystals. Fats make good cooking media because they can be heated to a higher degree without burning. Sebum is in another class of the group; oils-fats-waxes. At room temperatures Sebum is a soft wax. Carnuba wax is a very hard wax used in polishes and casting.
