You use a triple-beam scale to measure mass.
Because it is a weight measuring instrument which is able to measure weights to an accuracy of about 5 to 10 gram. Spring Balances which are commonly for cooking measures,are not very sensitive or accurate. You can only get an accuracy within about 20 grams with spring balances.
The normal triple beam balance reads in grams. The larger increments are 100 and 10 grams, and the final beam may measure continuously in grams and decimal fractions .
