They are condensed materials because that's what makes them what they are. The more condensed a substance is the less it can flow.

Gases are the least condensed, so they flow the easiest, followed by fluids, then solids.

Unlike gasses, solids and liquids have a set density, and can't be condensed or expanded any more than they already are, so they are referred to as being condensed.
