If you have two independent variables, and you change both during an experiment, how are you going to tell which one caused the change to the outcome?

So, you only change one independent variable at a time.

You need to control variables in an experiment so you can have greater confidence that what happens during the experiment is because of how you have manipulated the variable that interests you, the variable that you are studying. Without controls you are left with doubts about what actually brought about the results you observe... the variable you are studying, or some other variable that you did not account for.
